Sesame noodles

Sesame noodles are a super fast dish, perfect for busy days. These noodles are very popular in Taiwan, you can find them in many cold noodle stalls. Yes, usually it’s eaten cold, sauce is poured over cold noodles with julienned cucumbers on the side. Depending on the area in Taiwan, there are slight variations (it’s served with wasabi/mayo/ham by the side). 

Vegan, dairy free and gluten free. In my version noodles are served warm, because it’s winter 🙂

Ingredients for 2 portions:

  • 1 tbsp sesame paste or tahini
  • 1 tbsp peanut butter
  • 1 tbsp toasted sesame oil
  • 1 tbsp soy sauce
  • 2 tsp rice  vinegar
  • 1/2 tbsp brown sugar
  • 3 garlic cloves, minced
  • 1 cm ginger, minced
  • 2 tbsp hot water (noodle water) 
  • spring onions (for serving) 
  • peanuts (crushed, for serving) 
  • julienned cucumber 
  • noodles of your choice

1. Prepare noodles according to the packaging instructions. Reserve 2 tbsp of noodle water. 

2. Mix all the sauce ingredients. Pour it on the drained noodles and serve with spring onions and crushed peanuts on top and cucumbers by the side
