Chicken souvlaki

New week – new country. This time let’s travel to Greece.

For me, Greek cuisine is associated with summer and good weather. Colourful vegetables, oregano, tzatziki with dill freshness and lemon sourness. And the most important part is that all these tastes are well balanced. 

Today’s menu – chicken souvlaki (Greek chicken skewers). Souvlaki is popular fast-food in Greece. Super summery, it reminds me of the joyful grill season days. It is usually served in pita bread with tzatziki, cucumbers, olives and other veggies. Quick meal, you just need to marinade your chicken in advance.

Ingredients for 4 portions:

  • 500-600 g chicken breast or thighs
  • 4 tbsp olive oil
  • juice of 1 lemon
  • zest of 1 lemon
  • 2 tsp dried oregano
  • 1 tsp sweet paprika
  • 1 tsp ground cumin
  • 6 garlic cloves, minced
  • 1 tsp black pepper
  • 1/4 tsp cinnamon
  • 1 tsp salt
  • 6-7 bamboo skewers

For serving:

  • pita breads (I cooked myself gf and normal version)
  • tzatziki
  • cucumber
  • tomatoes
  • red onion
  1. Cut chicken into bite size pieces.
  2. In the big bowl mix all the spices with olive oil, garlic, lemon juice and zest. Add chicken and mix it well with your hands. 
  3. Cover with plastic wrap and place it in the fridge for at least a few hours ( I highly recommend to do it the day before cooking).
  4. Soak bamboo skewers in cold water for 15 min.
  5. Take marinated chicken out of the fridge, add salt and mix it well.
  6. After skewers are soaked, thread the chicken pieces, comfortably, on the skewers.
  7. Preheat the grill or grill pan on a high heat. Cook the chicken souvlaki for about 8 to 10 minutes, turning occasionally, until nicely coloured on all sides and cooked through.
  8. Serve with pita bread, cucumber, tomatoes, onions and tzatziki.
