Argentinian style chili

This dish is a meatlovers dream. It’s warm and heartily stew with chorizo and minced beef. It has mild spiciness and definitely warms you from the inside. I learned that leftovers of this stew go so well with pasta, as a sauce :). 

Ingredients for 4-5 portions:

  • 300 g chorizo
  • 400 g minced beef
  • 1 onion, diced
  • 1 carrot, diced
  • 1 red bell pepper, diced
  • 1 can of chopped tomatoes
  • ½ canned sweetcorn
  • 5 garlic cloves, chopped
  • 2 bay leaves
  • 2 tbsp oregano
  • 2-3 cups beef broth
  • 2 tsp paprika
  • 2 tbsp smoked chilli
  • 1 tsp cayenne pepper
  • 1 tbsp olive oil
  • salt and pepper to taste
  • cheese, for serving
  1. Heat a large pot to medium high heat. Add chorizo and cook until browned. Remove from the pan and set aside. 
  2. To the same pot add minced beef and cook in until browned. There should be enough fat from chorizo, but if it’s too little you can add tbsp of olive oil. After the beef is cooked, remove from the pot and set it aside. 
  3. Pour 1 tbsp of olive oil and add fresh veggies and spices to the pan, sauté for a few minutes. After that, return chorizo and meat to pot, pour beef stock and add canned tomatoes and corn. 
  4. Simmer for 30-40 min and serve it with some cheese on top.
