Miso glazed eggplant (Nasu Dengaku)

Miso glazed eggplant or Nasu Dengaku is a popular dish in Japan, especially in the middle of the summer (it’s a peak season for eggplants). This dish is usually made with well known American eggplant, because it has a lot of “meat” that works wonderfully with intense sauce. 

I fell in love with this dish from the first bite. It has intense umami flavour with sweetness – exactly what I like. And the best part – it’s super easy to make :).

If you search on the internet, there are many curry udon recipes. I decided to do more “soupy” homemade curry roux, but if you don’t feel like making your own or don’t have time, there is always a store bought roux waiting for you :).

Gyoza has many variations. These dumplings usually are cooked with fried/steamed cooking method. First you fry them in a pan with some oil and when the bottom is crispy, you add a little bit of water, cover the pan and let them steam. This cooking method gives different textures: crispy bottom with juicy filling and soft top.

Soy Glazed Eggplant

Soy sauce glazed eggplant is a fast and easy dish. I know, ingredients are not the healthiest with the amount of oil and sugar, but it’s food for your soul (at least for mine). If you want to make it a little bit healthier, eat it with miso soup and add some veggies on the side. Then it will be win-win for your body and soul.
